The acquisition gives Wonder a proven, loyal brand to scale quickly, strengthening its foothold in the competitive fast‑casual chicken segment and enhancing its delivery ecosystem.
Wonder’s purchase of Blue Ribbon Fried Chicken underscores a strategic shift from building concepts internally to acquiring established brands. By integrating a beloved New York fast‑casual chicken shop, Wonder leverages its proprietary ordering app, data‑driven inventory management, and a centralized kitchen model that pre‑prepares items before final assembly. This approach reduces labor costs and accelerates rollout, allowing the company to replicate the brand’s success across its extensive network of food halls and standalone locations.
The Blue Ribbon acquisition also deepens Wonder’s menu diversity, adding both chicken sandwiches and bone‑in fried chicken to its existing offerings. Retaining the original staff and brand identity preserves the local loyalty that has driven the East Village outlet’s popularity. Moreover, the integration into Wonder’s delivery platform—bolstered by its recent Grubhub purchase—expands the brand’s reach to on‑demand diners, a critical growth channel in post‑pandemic dining habits. The synergy between a trusted product and a robust logistics backbone positions Wonder to capture higher order frequencies and average ticket sizes.
Industry analysts view this move as a bellwether for the fast‑casual sector, where technology‑enabled scalability is becoming a differentiator. Wonder’s central kitchen strategy mirrors trends seen at larger operators seeking consistency while minimizing real‑estate risk. As consumer demand for high‑quality, convenient chicken continues to rise, Wonder’s ability to swiftly launch Blue Ribbon locations in major markets could pressure rivals to adopt similar acquisition‑driven growth models. The success of this integration will likely influence future M&A activity across the restaurant tech landscape.
Wonder announced the acquisition of Blue Ribbon Fried Chicken, a single-location fast‑casual spot in Manhattan’s East Village. The deal, disclosed on Feb 17, 2026, will keep the brand’s name and staff while integrating its menu into Wonder’s 100+ East Coast food halls and leveraging its tech and supply chain. The acquisition marks Wonder’s first fully owned brand and aims to drive growth across major markets.

Wonder Acquires Blue Ribbon Fried Chicken, Expands Its Restaurant Portfolio
Wonder has made its first full restaurant acquisition, Blue Ribbon Fried Chicken, a single‑location, fast‑casual spot in Manhattan’s East Village.
The restaurant will continue operating under its current name and staff, using Wonder’s tech and supply chain systems.
Wonder aims to grow the brand by opening additional standalone locations in major markets where it operates. Meanwhile, Blue Ribbon’s chicken sandwiches and bone‑in fried chicken will join Wonder’s existing menu lineup across its 100+ East Coast food halls, starting with a New York City location later this year.
The fried chicken concept began in 2013 as a spin‑off from Blue Ribbon Brasserie, part of Blue Ribbon Restaurants, founded by brothers Eric and Bruce Bromberg. The brand has a loyal following in New York—one Wonder plans to leverage as it expands.
“Bringing Blue Ribbon Fried Chicken into Wonder is an exciting step forward,” Wonder founder and CEO Marc Lore said in a statement. “With an incredibly loyal following already in place, we can now scale this iconic brand across the Wonder platform to reach far more people.”
This adds a third chicken concept to Wonder’s portfolio, joining Streetbird by Marcus Samuelsson and Mr. D’s Fried Chicken. Unlike most of Wonder’s previous brands, which were built in‑house or licensed, Blue Ribbon is the first fully owned brand acquired outright.
Wonder partially prepares meals in a central kitchen before finishing them in‑store, allowing the company to efficiently integrate new brands like this one into its system.
The original East Village location will stay open, and the menu will roll out across Wonder’s broader network. All locations will be available for delivery through the Wonder app and Grubhub, which Wonder acquired in early 2024.
